I cant believe that it is almost JUNE! Summer time is just around the corner. One of my favorite Spring and Sumer treats are galettes, and I can not get enough of them right now. A galette is more or less an open faced pie, but without the heavy filling. I love making fruit galettes which is why they are perfect for the summer…. although there are veggie and even some meat galette recipes out there (I haven't tried these yet though). Typically berries and other types of fruit like apricots, plums, peaches, etc. make the best galettes. Lately, peaches have been in prime season and we have a local vendor here in Nashville called The Peach Truck that you will find slinging peached all over town. Every time I get a new batch of PT peaches I use a couple of them in a galette. Y'all, these are seriously so delicious and super easy to make.
What you need:
- -2-3 peaches
- -1 roll-out pie crust
- -butter (or margarine)
Preheat your oven to 400 degrees. Lightly grease a cookie sheet and roll our your pie crust flat. slice your peached thing and arrange them in the center of the pie crust. Dab a few pad of butter on top of the peaches and lightly sprinkle the entire thing with sugar. Fold the edges of the pie crust in to for a crust around the edge. If you want you can lightly wet the edges of the crust and sprinkle more sugar on those too. Bake for about 25-30 minutes. Serve just like pie with a little but of vanilla ice cream on the side.
